defender weird
The ponytail-clad version of Strange, who appears at the beginning of the film, appears in the opening scene, wearing the classic costume of the character from Matt Fraction’s Defenders Run. He is initially working with America Chavez, but sadly he is unable to make it out of the initial controversy.
838 Odd
After arriving at Earth-838, Strange learns that Stephen Strange of that Earth died fighting Thanos, sacrificing himself for the rest of the universe. First as an idol, and later in a flashback when it is revealed that he was killed by Black Bolt (the rest of the Illuminati found out he was being taken in by The Darkhold). zombie funny
Not technically a different version but he looks different! While trapped in another universe, the MCU Strange (aka 616 Strange as the movie makes it clear), Dreamwalk returns to its own universe but the only body present is the corpse of Defender Strange. Is What If Zombie Strange is the same?

Is Klee a Doctor Strange variant?
The film’s mid-credits scene features the arrival of Klee, played by Oscar winner Charlize Theron, who asks for Strange’s help. It would probably be easy to think he’s a form of Strange from another world, with Marvel’s Loki opening the door on variants of the other genders that already exist, but Klee has a darker history in the pages of Marvel Comics, so it looks like it might. Not likely the case in the MCU Nevertheless, it is possible!
